This recipe caught my eye, from the “Joy of Cooking”, as I love cooking chicken in the Air Fryer. I am a big chicken eater, and I love everything chicken, although I am not a fan of a typical baked chicken.

I purchased my Air Fryer, from Amazon, a while back and I became obsessed quickly. Mostly because it delivers fast, delicious food and I don’t have to watch it.
Baked Mustard Chicken is exactly as it sounds, it’s baked (but in this case air fryer) the chicken comes out nice and moist, tender and quite simply amazing.
2 boneless, skinless chicken breast (I cut them into 6-inch pieces, as you can see from the picture they were HUGE)
1/4 cup of Honey mustard
1 cup of breadcrumbs
1/8 cup of fresh parsley
1 teaspoon of minced garlic
1 teaspoon of salt
1/2 teaspoon of black pepper
Start by coating one side of the chicken with the mustard, I used my hands, since I could rub it better with them.
Then in a small bowl mix together the breadcrumbs, parsley, garlic, salt, and pepper.
Then dip the coated chicken breasts (already brushed with the mustard), into the breadcrumb mixture.
As you finish coating the chicken, place it in the air fryer basket, generously spray the entire chicken breast with non-stick cooking spray or your oil mister. I like to coat the entire chicken breast, so you do not get any white or dry spots when it’s done cooking.
Set the temperature to 350 degrees F, for 10 minutes.
After 10 minutes, flip, spray the chicken with non-stick cooking spray or use your oil mister (filled with olive oil) and spray the entire chicken breast. If you do not spray the entire chicken, you will get white dry spots. Set the timer for another 8 minutes. After 8 minutes check the chicken, by cutting into it, or using a meat thermometer. ALWAYS CHECK YOUR CHICKEN AFTER IT’S DONE COOKING BEFORE EATING.
